Also, our passports will be expiring on Feb 2014 and I intend to apply for replacement passports by August. Should we wait for our visa approval to be released before changing our passports or should we have it changed prior to receiving the visa grant?

Resignation from work should not be a problem mate... And this is just for records purposes I believe as they will focus on your credentials PRIOR upon submission of visa application.
Passports, it doesn't really matter on your timing... Just make sure that when you do replace your passports, DIAC or your CO should be informed accordingly.
