Are you and your wife nearing your 40s (as this thread is focused on the age)? If so, as commonly suggested, it's better to consider skilled migration directly rather than student visa, because having a student visa is not an assurance of getting PR (although you do get additional points).
If not (like you're in your early 30s), it's still an option to go with the student visa, but with the international border closed to non-Aussies, you will have to wait a while if you want to study onshore. What are you planning to study though? If you are using your further studies to get PR, make sure that your studies will provide you with a pathway to PR. I've heard getting an MBA or Leadership/Management will not get you anywhere, so research your options well.
I'm not a migration agent, but I'd suggest you consider all possible options and see which one can get you a PR invitation first. The trend nowadays is to go regional, so maybe look into occupations for visa 491.
